Gli spaghetti cacio e pepe rappresentano uno dei classici della cucina romana.
Si tratta di una ricetta all’apparenza semplice con, appunto, soli tre ingredienti: spaghetti, cacio e pepe. In realtà non è molto facile prepararla, in quanto spesso capita che, invece di ottenere una bella crema densa, ci si ritrovi davanti solo del formaggio “slegato”. La ricetta originale non prevede assolutamente l’utilizzo dell’olio, ma consiste nel mixare ad hoc il cacio e il pepe, insieme all’acqua di cottura della pasta.
Il segreto sta nella qualità degli ingredienti, legati alle tradizioni dei territori in cui sono nati. È importante utilizzare un buon pecorino romano, grani di pepe interi schiacciati al momento e pasta da mantecare lentamente, in modo che assorba tutto il sapore del pecorino.
Ingredienti
- 200 grammi di pecorino romano;
- 350 grammi di spaghetti;
- pepe.
Procedimento
Per preparare gli spaghetti cacio e pepe è, innanzitutto, necessario grattugiare il pecorino e, nel frattempo, mettere a bollire l’acqua in un tegame. A temperatura raggiunta, si sala e si cala la pasta.
Mentre si cuoce, schiacciare i grani di pepe e metterli in una padella ampia antiaderente, tostare a fuoco lento, mescolando con una paletta di legno, e sfumare con un paio di mestoli di acqua di cottura della pasta. Quando gli spaghetti saranno al dente, scolare e versarli nella padella con il pepe tostato. A questo punto è importante finire la cottura della pasta in padella, girando continuamente con delle pinze da cucina e aggiungendo ancora un paio di mestoli d’acqua. Quando è pronta, versare metà dose di pecorino grattugiato in una ciotola, aggiungere un mestolo di acqua di cottura e mescolare energicamente con una frusta, in modo da creare una crema senza grumi. Unire, poi, il restante pecorino, un altro mestolo d’acqua e continuare a girare. Quando la crema sarà pronta, aggiungerla agli spaghetti, girando con una pinza e saltando la pasta in padella.
