L’Origine del Babà
Il babà non è un dolce come tanti altri ma ha una sua storia ed una provenienza ben definita. Si tratta di un dolce tipico della pasticceria napoletana, realizzato con pasta lievitata, la cui consistenza spugnosa viene imbevuta in uno sciroppo liquoroso a base di rhum che gli conferisce l’inconfondibile sapore. Esso si presenta in due varianti: la classica forma a fungo di varie dimensioni, dai 5 ai 15 cm, e la versione a “ciambella” farcita al centro con la panna o con crema pasticcera e frutta sciroppata.
Le origini
L’origine del babà va oltre i confini campani poiché questo dolce è stato inventato nel Settecento dal sovrano polacco Stanislao Leszczinski, durante il suo esilio nel Ducato di Lorena, a seguito della sconfitta militare contro Pietro il Grande. Il re, non potendo più esercitare il suo potere politico, era sempre affranto e amareggiato e per addolcire le giornate desiderava sempre qualcosa di dolce da mangiare. Era molto esigente e i suoi cuochi, non sapendo più che cosa proporgli, spesso gli portavano il kugelhupf, un dolce tipico, fatto con farina, burro, zucchero, uova e uva sultanina. Egli però non gradiva la consistenza così un giorno lanciò il dolce, colpendo una bottiglia di rhum; nella stanza si sprigionò un particolare profumo e Stanislao, incuriosito, assaggiò il dolce imbevuto di liquore. Da quel momento nacque il babà che conosciamo oggi, che prese il nome da Alì Babà, a cui Stanislao dedicò la nuova e casuale creazione dolciaria.
L’arrivo a Napoli
Dalla Lorena il babà arrivò presto a Parigi, nella pasticceria Sthorer. Nell’Ottocento, sotto il dominio borbonico, la cucina napoletana conobbe l’influenza francese, grazie degli chef francesi che furono ingaggiati dalle nobili famiglie della città. Essi portarono il dolce nell’attuale capoluogo campano ma fu la maestria dei pasticceri napoletani, attraverso una lunga lievitazione dell’impasto, che rese il babà ancora più soffice. Sempre ai pasticcieri napoletani si deve la forma a fungo, che è anche la più conosciuta. Questo dolce ha avuto una diffusione tale nella cultura partenopea, da entrate a far parte dell’espressione tipica “Si’ nu babà” per indicare una persona dolce ed affettuosa.
