Amatriciana, un caposaldo della cucina italiana

Come tutti ben sanno, l’amatriciana è uno dei piatti tipici romani: infatti, è possibile mangiare questa succulenta proposta di pasta in ogni trattoria di Roma che si rispetti.
Da tradizione, però, la ricetta è nata ad Amatrice, piccolo paesino in provincia di Rieti, e sembra che la sua antenata sia la gricia. Quest’ultima fu inventata dai pastori di Amatrice quando ancora non si conosceva il pomodoro. La gricia era, infatti, il loro pasto principale, fatto di pecorino, pepe nero, pasta, guanciale e strutto. Ancora oggi, in effetti, questi sono gli ingredienti del piatto, al quale – successivamente – fu aggiunto il pomodoro, dando vita, appunto, all’amatriciana.
La ricetta
La ricetta originale dell’amatriciana è stata recentemente tutelata dal Comune di Amatrice con un marchio di origine. Come indicato nel disciplinare non sono previsti né aglio, né cipolla. Il piatto richiede l’utilizzo di pochissimi ingredienti. Vediamo insieme quali sono:
- 400 grammi di spaghetti;
- 100 grammi di guanciale (di Amatrice);
- 75 grammi di pecorino di Amatrice;
- 350 grammi di pomodori San Marzano;
- 1 cucchiaio di olio EVO;
- 50 ml di vino bianco secco;
- sale, pepe;
- 1 peperoncino.
Il procedimento è molto semplice, ma va seguito alla lettera.
In una padella di ferro mettere il guanciale a listarelle, l’olio e il peperoncino e far rosolare a fiamma vivace per qualche minuto. Quando il guanciale sarà diventato trasparente, sfumare con il vino bianco. Togliere il guanciale dalla padella e tenerlo da parte al caldo. Anche il peperoncino, che avrà dato il sapore, va tolto, evitando di bruciarlo. Nella stessa padella versare il pomodoro, aggiungendo sale e pepe. In un secondo momento, poi, aggiungere di nuovo il guanciale, finendo di cuocere e addensando il sugo. Nel frattempo calare la pasta (solitamente i bucatini) e, quando sarà al dente, condirla con il sugo. È necessario saltare molto velocemente la pasta con il sugo, affinché si amalgami bene al condimento.
Infine aggiungere il pecorino, continuare a girare e servire: è uno dei piatti più buoni della tradizione gastronomica italiana.
