Dalla ricerco, infatti, è emersa la seguente constatazione: “più la lattuga è rossa e più è veloce il suo effetto antiossidante e di reazione nei confronti dei radicali liberi, responsabili dell’invecchiamento e del danno cellulare che determina l’insorgere di numerose malattie”.
Una ricerca internazionale
L’avresti mai detto che la lattuga rossa aveva della proprietà anti-age? Probabilmente no, per dimostrarlo è stato necessario un lavoro congiunto tra il dipartimento di Scienze agrarie dell’Università di Pisa, il dipartimento di Biologia Vegetale ed Ecologia dell’Università dei Paesi Baschi e il laboratorio di Spettroscopia Epr-Endor-Nmr del Cnr pisano.
L’effetto anti-age
Questi centri di ricerca hanno portato alla scoperta della presenza, all’interno dell’insalata rossa, di alcuni composti che presentano attività antiradicalica come i fenoli, tra i quali le antocianine, e vitamine come la A e la C. Inoltre, è stato dimostrato che più la pigmentazione dell’ortaggio è rossa e maggiore è la presenza di antiossidanti caratterizzati da un’alta velocità di reazione nei confronti dei radicali liberi.
Perché preferire la lattuga rossa
Lo studio ha analizzato tre varietà differenti di lattuga (Batavia, dal colore verde, Marvel of Four Seasons, verde-rossa, e la rossa Oak Leaf) attraverso tecniche di Electron Spin Resonance (Epr) e per la prima volta ha dimostrato la relazione fra il comportamento cinetico degli estratti di lattuga differentemente pigmentata e la relativa composizione in metaboliti antiossidanti.
